Elizabeth Yakes-Jimenez, PhD, RD is a Research Associate Professor in the Center for Education Policy Research at the University of New Mexico, and a Research Scientist at the Pacific Institute for Research and Evaluation in Albuquerque. Elizabeth's research is focused on the prevention of micronutrient deficiencies and on the prevention and improved treatment of obesity and diabetes in underserved populations, with a particular focus on maternal, child and adolescent populations, and on work with schools and school-based health centers. She has expertise in design and implementation of community-based research studies and the collection and analysis of dietary intake, food security, nutritional biomarker, physical activity, body composition and anthropometric data. She is a pediatric registered dietitian with a B.S. in human nutrition and an M.S. in public health nutrition from Case Western Reserve University, and a Ph.D. in epidemiology from the University of California, Davis.
